Socca is made from chickpea flour. A good Brand is Bob's Redmill. This is the preferred brand for me. Anyway, take a cup of the flour and place in a medium bowl. Add a cup of water. One teaspoon of olive oil is optional. You can add 1/4 Italian seasoning and a sprinkle of thyme or just leave plain. Let sit for 15 minutes.  Spray a skillet with oil or put a small amount into your skillet. I use a non-stick skillet.

Pour out like you would a large pancake. Let cook on one side for about 3 minutes untill golden, then flip to other side. Top with a red sauce, like a pizza sauce and add your favorite toppings. I saute some mushroom beforehand and bell peppers with onions. Fresh tomatoes with basil is another option that tastes great. I am not a chesse lover, but for those who like chesse, this can also be added. Be creative and come up with your favorite toppings. One cup is usally enough for two small socca pizzas . Another name for chickpea flour is gabanzo bean flour. 

The socca pizza is quite filling and I find that one is enough per person. It's a healthy alternative to flour.
