For those of you who have tried making a chia pudding with water and found it a bit taste-less, try this version with cocoa powder. It's delicious!

1 cup almond milk or other plant milk

1/4 cup chia seeds

2 tablespoons unsweetened cocoa powder

1 to 2 tablespoons brown sugar. or use maple syrup

1 teaspoon almond extract and 2 teaspoons vanilla


3 lady fingers or 3 small squares of pound cake- optional

Put the chia seeds, cocoa powder, sweetner and extracts in medium bowl. Wisk until smooth. Add the almond milk. Mix well.  Mix a few more times over a twenty minute period, then put saran wrap over and place in refrigerator.  It should be semi- finished in 3 hours. 

 After 3 hours find 3 small wine glasses or other containers. Put a lady finger or pound cake in each glass/container. I break the lady fingers in half. Add a teaspoon of jam over the lady finger or pound cake. Add some berries (I used blueberries) and then fill up glass with the pudding mixture. Add berries on top. You could also add some nuts if you prefer. Do this with each container/glass.Put back in the refrigerator for another 2 to 3 hours. Or over-night.

It will have a rich flavor of chocolate without the fat or dairy. This is a very healthy version of pudding and tastes great!  If you try this, leave comments and let me know if you try other variations. Would love to hear from you!
